Casablanca

Casablanca has a world-ranked pizzeria run by a world champion. Can this guide publish it?

Morocco · 3 spots selected · last checked 2026-09-19

Not yet, and the reason is worth publishing even though the record is not. Stagione is the house that would have carried the case. Its maker, Ayoub Ayache, left Morocco for Italy at seven or eight, trained there, won the 2025 Caputo world championship in Naples, and came back to open his own place in Casablanca in November 2025. He clears the specialist floor comfortably. No source opened anywhere gives the restaurant a street address: its own Instagram and Facebook returned errors on repeated tries, and the listing sites returned 503s and 404s. An address is in this guide's minimum for publication, because a guide that sends a reader to a place it cannot locate is not a guide. So Stagione is held, not dropped, and it will publish the day someone supplies the street it is on. What does publish is three Neapolitan houses in Maârif, Gauthier and the Roudani-Louvre corner. Casablanca's case in this edition is therefore incomplete by a single field, and the guide would rather show the gap than fill it.

OTTO Pizza Napoletana

OTTO is the reference for Neapolitan pizza in Casablanca's Maârif district: a wood oven, a chef said to have trained in Naples, ingredients arriving from Italy, and a dough given a minimum 48-hour fermentation. It is cash-only, does not take reservations, and seats fewer than thirty, which reads as a specialist operation rather than a large restaurant.

Solo Pizzeria Napoletana

Solo Pizzeria Napoletana in Gauthier is a Neapolitan-format pizzeria whose menu credits a named, independently verifiable chef — Myriam Ettahri, a well-known Moroccan chef (Cordon Bleu-trained, past kitchens under Pierre Gagnaire and Heston Blumenthal) — for a specific signature pizza built on San Marzano tomatoes and fior di latte.

Street Pizzeria Napoletana

Described locally as one of the first places to bring Neapolitan-style pizza to Casablanca, before it became fashionable, Street Pizzeria Napoletana runs a wood oven that does the work on a soft, lightly smoky dough, at a lower price point than the more premium Maârif and Gauthier addresses.
