Verona

Verona's famous pizzerias are all outside Verona. Does a city own the reputation made in the comuni around it, or only what is baked inside its own line?

Verona's standing in pizza is real and almost none of it is inside Verona. The two names the city is known for — the pizzaricercatore who has placed fourth in Italy's ranking two years running, and the house that has carried a contemporary programme for a decade — work in San Martino Buon Albergo and San Bonifacio, separate comuni, one of which does not even border the city. Inside the line there are two pizzerias in the unranked excellent tier and nothing in the ranked hundred in either of the last two years. What the comune does have is a genuine local combination, sold under city and regional names rather than a style name: the red radicchio, Monte Veronese cheese, the seasoned pork mince called tastasal, sometimes an Amarone reduction. Four menus inside the city carry it. None of them calls it alla veronese. The man most associated with the combination calls it Veneto, not Veronese. And the radicchio that gives it the city's name is grown on the lower plain and into two neighbouring provinces, not here — it is named for Verona as a market rather than as ground. The honest shape is a city whose pizza reputation is borrowed from its province and whose own contribution is a topping, not a dough.

Region
Veneto

Boundary
The comune di Verona, provincia di Verona. Its frazioni count — Marzana is Circoscrizione 8 and is inside the city, although rankings print it as though it were its own town. Sixteen comuni border Verona and none of them is in it: San Martino Buon Albergo above all, where Saporè is, and also Bussolengo, Negrar di Valpolicella, San Giovanni Lupatoto and Villafranca di Verona. San Bonifacio, where I Tigli is, does not even border the city.

Pizzeria Focacceria Quattrocento

One of the two pizzerias actually inside Verona's line, in a frazione most rankings print as if it were a separate town. Verona's reputation is made in the comuni around it; this is one of the places making pizza in the city itself.

Guglielmo e Enrico Vuolo (Verona)

The clearest case of what Verona's pizza actually is: a Naples name, brought north, making Neapolitan pizza very well in a city that has no pizza of its own. The seawater dough is the one departure from orthodoxy, and it came from Naples too.
