Singapore has no Italian migration behind it, so its pizza arrived on purpose: named pizzaioli from Naples and Caserta, AVPN discipline, imported ovens. The records say that plainly. Local flavour appears as a topping on an imported dough rather than as something worked into the form, and that distinction is the whole of what this guide means by distinctiveness. It is a city that buys excellence rather than growing it, and buying it well is still worth recording.

Boundary
The Republic of Singapore, which is a city and a state at once — the one cohort city where no boundary question arises.
Antonio Miscellaneo names his own style 'Newpolitan' and describes it precisely: 70-80% hydration against a classic Neapolitan's 55-65%, 48 hours of fermentation, and a two-stage bake across two ovens set to different temperatures to drive moisture out of the crust. The restaurant grew out of a private-dining pizza business he ran from a condominium balcony from 2018.
Owner Mason Lim uses no commercial yeast at all: a starter made from Type 00 flour from Naples and water, at 72.5-75% hydration, fermented 6-8 hours at room temperature and cooked in a Gozney Roccbox at 420-450°C. The business started as a takeout operation from a single Roccbox during Singapore's 2020 Covid-19 dining restrictions and now runs a reservation-only, three-nights-a-week room.
Fortuna's dough numbers are specific: flour from Molino Casillo, 75% hydration, 50 hours of fermentation, cooked 60-90 seconds at 430-480°C in a Valoriani oven, with a fry-then-bake step on the base. There is a genuine conflict, recorded below, over who is actually responsible for that dough.
This is the actual Naples brand founded by the Condurro family in 1870, opened as its first Asia-Pacific location in 2024 under director and co-owner Marcello Mazzotta. The dough is described with specific numbers — Caputo flour, fresh brewer's yeast, 60-65% hydration, 24-48 hour fermentation, baked 45 seconds at 480-500°C — and the menu is deliberately narrow, in the same spirit as the original: for decades the Naples original served only Marinara and Margherita.
Vincenzo Capuano's own description of his method matches the charter's definition of pizza contemporanea closely: precision in place of his father's and grandfather's instinct, a proprietary flour blend (Nuvola Super), a 24-hour preferment, and an almost soupy 80% hydration dough that diners cut with scissors to see the air pockets. The Singapore branch, which opened in May 2025, is his first in Asia.
Roberta's, running in Brooklyn since 2008, opened its first Singapore restaurant at Marina Bay Sands in 2022. Chef and co-owner Carlo Mirarchi describes reworking the hydration level and flour ratio specifically to handle Singapore's humidity, on a dough close to classic Neapolitan style: 65-72% hydration, 72-hour fermentation on a decade-old sourdough starter, baked about two minutes at 425°C.
