Every pizzeria in Makati's record opened recently and none of them adapts to the Philippines. What does that tell you?
Makati is the guide's cleanest example of a pizza scene that is purely a transplant, and it is more useful for being unambiguous than it would be if it were flattering. Four records, skewing heavily to very recent openings — Pizza Studio Tamaki arrived at Ayala Triangle on 11 October 2025, a Tokyo brand's Philippine debut with a wood-fired Yamamiya oven built to the original's specification and Hiromi Nakada running the kitchen day to day. a mano, Crosta and Pizzetta fill out the field on named makers. Across all four, no local-ingredient adaptation story appeared at all. Not a Filipino topping tradition, not a local flour, not a named dish. That is unusual even among this guide's import cities — Bangkok works Thai chilli into the dough's company, Johannesburg has its peppadew pizza, Bogotá has fifty years of guava paste. Makati has the form arriving intact and staying intact. The distinctiveness dimension should score that near the floor, and the record says so plainly rather than hunting for a redeeming detail. A guide asking which city has the best pizza culture has to be able to say when a city has an excellent pizza supply and no pizza culture at all.

Under Japanese-Filipino pizzaiolo Yuichi Abellare Ito, Crosta runs three parallel formats -- round sourdough, Sicilian pan and Detroit-style deep-pan -- built on long fermentations and a self-described mix of Italian, Filipino and Japanese ingredients, which is the clearest Makati example of a named maker deliberately working outside a single regional tradition rather than reproducing one.

Pizzetta is a June 2025 Poblacion opening built explicitly as a lower-priced, high-hydration Neapolitan-style counter -- Wellington wheat flour, hand-stretched rather than rolled dough -- under two named head chefs with Metro Manila pizza-kitchen backgrounds (Alvin Pobre previously made pizza at Amare La Cucina and La Dolce Vita). It is the newest of the four Makati records and the clearest case of Neapolitan technique deliberately repriced for a neighbourhood audience rather than a fine-dining one.

Pizza Studio Tamaki opened its Manila outpost on 11 October 2025 at Ayala Triangle Gardens, the brand's international expansion beyond Tokyo, Hokkaido, Okinawa, Singapore and Bangkok. Chef Tsubasa Tamaki and Chef Hiromi Nakada bring the house's proprietary flour blend and custom oven to the Philippines, giving Makati a second, entirely distinct pizza tradition alongside a mano's and Crosta's Neapolitan and multi-style programmes.
