Gurugram

Gurugram's pizza culture is six years old. Does that disqualify it or just place it?

It places it, precisely, and the city is valuable to this guide for being so legible. Pizzeria Da Susy is the clearest case in the city: founded by Naples-born Susanna Di Cosimo, working a wood oven on a dough given between forty-eight and ninety-six hours. Her own account is that she discovered Neapolitan pizza during the 2020 lockdown. EVOO and Camino fill out the field on a named maker and a specifically described 900°F brick wood oven. There is no local terminology, no older institution, and no indigenous form. Gurugram is an import city built inside six years, which is exactly what the Index's own reasoning predicted for a city of this profile — and a model that could not tell it apart from a city with a century-old tradition would be broken. One scope call was made by reasoning rather than reflex. The Indian localisation found — an eggplant-and-bhindi pizza, a palak paneer white pizza — is toppings-level variation on an Italian base by the makers' own description. That is in scope, and it is not a separate dish requiring exclusion.

Boundary
The city of Gurugram, Haryana. It is not Delhi, and Delhi would be its own record.

Selected in Gurugram

Pizzeria da Susy

Founded in 2020 by Naples-born Susanna 'Susy' Di Cosimo after her tour-operator business was interrupted by the pandemic. The dough matures cold for 48 to 96 hours at controlled temperature and bakes in a wood-fired oven; the flour is imported Molino Caputo, the tomatoes San Marzano and the mozzarella di bufala.

EVOO Eatery & Pizzeria (Gurugram)

An Italian eatery with a dedicated wood-fired pizza programme, one of two locations (the other in south Delhi) run by founders Parul and Sachin Grover. The business's own site describes a copper-mosaic-clad wood-fired oven; at this Gurgaon branch, not the Delhi one, that oven stands in an open kitchen and a Cacio e Pepe pizza comes out of it. No dough production detail (hydration, fermentation time, where the dough is made) is stated anywhere found for either location.

Camino Pizzeria

A delivery-oriented wood-fired pizzeria on MG Road, baking in 900°F brick ovens and offering both Neapolitan and thin-crust styles. No maker is named and nothing is stated about where or how the dough itself is made, but the oven claim alone is specific enough — a stated temperature and construction, not just the word 'wood-fired' — to clear the floor.
