Al Dente

Al Dente opened in central Zagreb in May 2021 as, by its own pizzaiolo's account, the city's first canotto-style pizza — a puffier-edged relative of Neapolitan he described at the time as 'something between napoletana and canotto'. Enes Hrnjić trained at two of the city's most influential pizzerias, O'Hara and Publico, before bringing the style to his own kitchen, and the business runs pizza alongside a full trattoria programme (San Marzano and fior di latte-based pizzas, but also pasta such as papardelle with smoked mussels).

Bogovićeva ulica 5, Zagreb 10000 (Donji grad; two further Zagreb locations trade at Sesvetska 3 and Veslačka 17) · Zagreb · Neapolitan · est. 2021
